Zucchini & Goat cheese crumble

Ingredients

  • 4 zucchini

  • 1 or 2 garlic cloves

  • Salt and pepper to taste

  • 140g goat cheese

  • 150g flour

  • 150g Parmesan cheese

  • 125g butter


Method

  1. Slice and cook the zucchini in a pan with a drizzle of olive oil and a cuple of garlic cloves until they release no more water;

  2. Add salt and pepper to taste and let cool;

  3. In a bowl mix the flour, Parmesan cheese and butter with a fork until crumbles form;

  4. Layer the cooked zucchini in an oven-proof dish, top them with goat cheese and dough crumbles;

  5. Bake at 190 C for 20/25 mins (you may broil it for a couple of minutes to get a nice crust).
