Are you looking for an easy yet stunning cake for a special occasion? The Victoria Sandwich cake is the answer. This fool-proof recipe by the fantastic Mary Berry is so quick you won't believe it. You drop all ingredients in one bowl and mix them. That's it!
Ingredients
For a 6.5″ x 2.5″ cake:
3 large eggs
175 g butter (softened)
175 g caster sugar
175 g flour
6 g baking powder
2 pc 6.5″ x 2.5″ cake pan
Filling
150 g strawberry jam
150 g whipping cream
15 g confectioner sugar
Method
Pre-heat oven to 180°C/Fan 160°C. Grease cake pans and line the base with parchment paper;
Measure eggs, sugar, butter, baking powder and flour into a large bowl and beat until thoroughly blended (around 2 minutes). Then divide the mixture evenly between the pans and level out;
Bake for about 25 minutes. Let cool in the moulds for a few minutes then turn out onto the palm of your hand, peel off the parchment and leave to cool on a wire rack;
Whip cream and confectioner sugar until soft peaks form (leave around 1 tsp sugar aside for sprinkling on the cake) ;
When the cakes are cold, sandwich them together with the jam and whipped cream. Finally, sprinkle with confectioner sugar. Done!
