Thermomix Gingerbread cookies

I’ve recently discovered this super easy Thermomix cookie recipe and couldn’t wait to share it. Unlike most gingerbread cookie recipes, it is very simple and quick. Furthermore, it contains no eggs so if you switch the butter by margarine it may become a Vegan recipe too. You don’t have a Thermie? No problem! Just melt the butter and sugar in a saucepan and mix all ingredients in a bowl with the help of a wooden spoon. Yes, it is that simple. Are you baking yet?


Ingredients

  • 125 g unsalted butter

  • 100 g dark muscovado sugar

  • 50 g golden syrup

  • 300 g plain flour

  • 1/2 tsp bicarbonate of soda

  • 1 tsp ground ginger

  • 1/2 Tbs cinnamon


Instructions

  1. Place the butter, muscovado sugar and golden syrup in the Thermomix mixing bowl and melt on setting 4 Min./55°C/Speed 2.

  2. Add the remaining ingredients to the Thermomix mixing bowl and briefly mix on setting 20 Sec./Speed 5.

  3. Remove dough from mixing bowl and place on a floured surface. Knead to a stiff dough, then roll it out between two sheets of parchment paper with the help of a rolling pin at about 5mm thickness and use cookie cutters to cut out your your favorite shapes (if you see the dough has heated up, place it in your fridge for 30 more minutes before you cut any shape);

  4. Place cookies on an ovenproof tray lined with grease proof paper and let rest in the fridge while your oven heats up;

  5. Place the gingerbread cookies in the oven and bake at 200 C for 7-8 minutes.
