The 130 Citrus Bundt cake

This citrus cake is one of the easiest yet yummiest treats I’ve ever tried. Forgetting the recipe is practically impossible: 130 is all you need to remember. It doesn’t have too much sugar nor flour and it’s butter free so it happens to be Vegetarian too. And last but not least it is packed with vitamins!

Ingredients

  • 3 eggs

  • 130 g sugar

  • 1 tsp Vanilla extract

  • 130 g orange juice (can be replaced by 130 g water) *

  • 130 g Canola oil

  • 1 lemon, the juice of

  • 130 g flour

  • 13 g baking powder

Method

  1. Heat oven to 180 C and grease your Bundt cake mold with butter and flour;

  2. Combine eggs and sugar until fluffy and pale yellow, then add in vanilla, orange juice, lemon juice and Canola oil while keeping on whisking;

  3. Add in dry ingredients (flour and baking powder) and mix again until combined. Your batter will be on the runny side but that’s exactly how it is supposed to be;

  4. Pour batter into the prepared mold and bake at 180 C for 40/45 minutes. Enjoy!

* I really like orange juice better as it gives the cake a sweet and tangy taste. You may add in the zest of the orange and lemon too, I often skip it as I like to keep it quick and easy. But they do add flavor and consistency.
