CRUST *
80g water
70g Canola oil
1 tbs baking powder
250g flour
salt to taste
FILLING
200/250g of goat cheese
1 onion
1 Tbs of balsamic vinegar
Method:
Combine water, oil and salt into a bowl and stir the mix quickly with a wooden spoon;
Add in flour and baking powder little by little while stirring until a dough starts forming;
Transfer your dough onto a floured surface and keep working it with your hands until it doesn't stick to them;
Your dough is ready! Spread it with the help of a rolling pin than use a round or flower-shaped cookie cutter to cut out 12 disks;
Place your disks into a greased muffin tin;
Chop the onion then pan fry it for a couple of minutes. When it's see-through, add in balsamic vinegar and let caramelize for a few more minutes. Then set aside to cool off;
Cut your goat cheese into 12 slices;
Place a spoon of caramelized onion and a slice of goat cheese into each crust;
Cook at 180C for around 20/25 minutes, then broil for 1 minute.
* No time to make your own dough? You can use puff pastry or empanada disks too!
