Super easy raspberry ice cream

If you’ve got some berries and want to make your kids really happy in literally 2 minutes, here is the right recipe for you. It is incredibly quick and easy, contains very little sugar and the best part is: everyone at home will love it!



Ingredients

  • 50 g sugar

  • 500 g raspberries (or your favorite berries)

  • 1 tsp vanilla extract

  • 120 g sour cream (or plain yogurt)


Method

WITH THERMOMIX

  1. Wash and dry raspberries and freeze them for at least 3 hours or overnight;

  2. Place sugar in mixing bowl and grind 15 sec/speed 10;

  3. Add in frozen raspberries and mix 15 sec/speed 8;

  4. Add sour cream or yogurt, place lid on with spatula instead of the measuring cup and blend 40 sec/speed 5.


WITH FOOD PROCESSOR

  1. Wash and dry raspberries and freeze them for at least 3 hours or overnight;

  2. Place sugar in the bowl of a food processor and grind at maximum speed for 15 seconds;

  3. Add in frozen raspberries and mix at medium-high speed for 15 more seconds, then lower speed and add in sour cream or yogurt and mix until blended;


Serve right away or use an ice-cream scoop to form little balls and freeze them so they’re ready to be served any time you need them! You may as well freeze it as it is, then, before serving it, cut it into 2 cm cubes and blend it again at medium-high speed for about 1 minute (with Thermomix: 30 sec/speed 6 ).
