Sugar free Notella


If you’re looking for a yummy and good for you hazelnut chocolate spread that tastes even better than the original, Vegan Notella is what you need! The kids love it and it’s so easy to make that I’m actually embarrassed to share the recipe. Basically, you toast your hazelnuts, drop all ingredients in your Thermie and blitz them for less then 2 minutes. Can you make it if you don’t have a Thermomix? The answer is yes. I’ve done it many times with my good old food processor and it still tasted great. But having a Thermomix makes it easier and quicker: the machine is very powerful and literally does all the job for you. My daughter loves watching me doing it as she says we’ve got magic powers: we can turn dates and cocoa powder into chocolate spread. How cool is that?



Ingredients

  • 150 g hazelnuts

  • 6 dates, pitted

  • 40 g sugar free cocoa powder

  • 170 g Agave syrup (or Maple syrup)

  • 120 g coconut milk

  • 1 Tbs vanilla extract

Method

  1. Preheat oven to 200°C and line an ovenproof tray with baking paper;

  2. Place hazelnuts on tray and roast for 10 minutes. Let cool, then place them into the mixing bowl of your Thermomix;

  3. Add dates, cocoa powder, maple syrup, almond milk and vanilla extract and mix for 1 and 1/2 minute at Speed 10;

  4. Pour into a sterilised jar and keep in the fridge for up to 4 weeks. You’re all done!
