Ingredients
4 eggs
350 g leftover spaghetti *
4 Tsp Parmesan cheese, grated
80 g ham, chopped **
15 g butter, cubed
Salt and pepper to taste
Method
Lightly beat eggs in a big bowl;
Add in spaghetti, cheese, ham, butter, salt and pepper and mix thoroughly until all ingredients are combined;
Heat up a no-stick pan, then add in the pasta and egg mix and cook on medium heat for a couple of minutes, then lower the heat and cover. When the sides of your pasta frittata start browning (about 5 minutes later), turn it upside down on your pan cover or on a big plate and let it gently slide back into the pan. Cook for about 5 more minutes or until the bottom of your pasta omelette is nice and brown. Enjoy while still warm or serve cold as an appetizer!
* If you don’t have any spaghetti leftover, you can make this meal from scratch and it will taste just as good. Just boil 350 g spaghetti in salty water and cook just until al dente, then drain the water out and let cool for a couple of minutes; **Ham can be replaced by salame or bacon or you can use a mix any two of them. I chose a mix of pepperoni and ham to use up all the leftovers I had in my fridge!
