Spaghetti omelette (Frittata di pasta)


If you haven’t tried this Southern Italian comfort food yet, here you are the recipe. It’s super quick and makes for a great last-minute meal that all the family will love. So what are you waiting? It’s time to make good use of those pasta leftovers lingering in the fridge!


Ingredients

  • 4 eggs

  • 350 g leftover spaghetti *

  • 4 Tsp Parmesan cheese, grated

  • 80 g ham, chopped **

  • 15 g butter, cubed

  • Salt and pepper to taste


Method

  1. Lightly beat eggs in a big bowl;

  2. Add in spaghetti, cheese, ham, butter, salt and pepper and mix thoroughly until all ingredients are combined;

  3. Heat up a no-stick pan, then add in the pasta and egg mix and cook on medium heat for a couple of minutes, then lower the heat and cover. When the sides of your pasta frittata start browning (about 5 minutes later), turn it upside down on your pan cover or on a big plate and let it gently slide back into the pan. Cook for about 5 more minutes or until the bottom of your pasta omelette is nice and brown. Enjoy while still warm or serve cold as an appetizer!


* If you don’t have any spaghetti leftover, you can make this meal from scratch and it will taste just as good. Just boil 350 g spaghetti in salty water and cook just until al dente, then drain the water out and let cool for a couple of minutes; **Ham can be replaced by salame or bacon or you can use a mix any two of them. I chose a mix of pepperoni and ham to use up all the leftovers I had in my fridge!
