Roasted cherry tomatoes caprese

An old-time favorite dressed up in a new fancy way.


Ingredients

  • 3 cups cherry tomatoes

  • 2 cloves garlic, minced

  • 1 tsp dried oregano

  • 1 Tsp olive oil

  • Salt and pepper to taste

  • 1 mozzarella (about 225 g)

  • 1 Tsp black and green olives

  • 1 Tsp balsamic vinegar

Method

  1. Preheat oven to 190 C fan. Arrange tomatoes, olives, garlic, and oregano on a baking pan lined with parchment paper. Drizzle with olive oil and sprinkle with salt and pepper. Roast for 30/35 minutes, just until tomatoes are starting to burst;

  2. Remove from oven and arrange mozzarella cheese in the center of the pan. Spoon the tomato mixture over it and drizzle with a little balsamic vinegar. Serve with bread and enjoy while still warm.
