Rainbow skillet cookie

Ingredients

  • 1 1/2 cup (215g) all-purpose flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 stick (110g) unsalted butter

  • 1/2 cup (110g) brown sugar

  • 6 tsp (25g) granulated sugar

  • 1 large egg (57g)

  • 1 tsp vanilla extract

  • 1/2 cup M&M's or Smarties (this can be replaced by 3/4 cup of chocolate chips)

Method

  1. Cut butter into cubes, then place it in a cast iron skillet and let melt on low heat until brown. Then let it cool for a couple of minutes;

  2. When the butter is room-temperature, add in sugar directly into the skillet and fold it in with a wooden spoon until creamy;

  3. Add in egg and vanilla and mix until just combined;

  4. Gradually fold in the flour, salt and baking soda. Make sure you do not over mix your dough;

  5. Spread dough out to the edges of your skillet and top it with M&M's;

  6. Turn your stove-top heater on and cook on low-medium heat for 20 minutes;

  7. Let cool off for a couple of minutes, then transfer to a wire rack until cool... or eat it right away with a dollop of your favorite ice-cream!
