Everyone likes donuts: they’re so fluffy and colorful, let go cute. But all moms wish they weren’t fried and overloaded with sugar. So here you are the secret to a much healthier version of the traditional recipe: baked donuts with just 50 g of added sugar. All you need is a donut pan and in as little as 15 minutes you’ll have 20 wonderful and colorful little cakes on your table. Are you ready to make your kids very happy today?
Ingredients (for 18 to 20 mini donuts)
Dough
180 g flour
50 g sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp nutmeg
1 pinch salt
1 egg
1 tsp vanilla extract
80 g milk
170 g plain Greek yogurt
30 g Vegetable oil (Canola, Sunflower, Coconut...)
Toppings
Cinnamon-sugar coating
2 Tbs sugar
1 Tbs cinnamon
10 g butter, melted
Vanilla
1/4 cup confectioners’ sugar
1/4 tablespoon milk
1/4 tsp vanilla extract extract
White sprinkles (optional)
Chocolate
30 g dark chocolate
1 tsp coconut oil
Sprinkles (optional)
Method
First of all let’s make donut cakes:
Preheat oven to 170 C static and spray a 12-cavity mini donuts pan with cooking spray. Sift and mix all dry ingredients (flour, sugar, nutmeg, baking powder, baking soda and salt) in one bowl. Whisk all wet ingredients (milk, yogurt, oil, vanilla extract, egg) in a different bowl, then add in dry ingredients and mix until combined;
Pour batter into doughnut tin: fill each cavity 3/4 full and bake at 170 C static for 12 minutes;
Let donuts cool off in their tin for 10 minutes then, place them on a cooling rack.
Now let’s make the toppings!
Cinnamon/sugar coating: mix sugar and cinnamon in a bowl. Drop donuts in melted butter then coat them in the sugar and cinnamon mix;
Sugar glaze: place powdered sugar in a bowl, add in water and vanilla extract and mix thoroughly with a spoon until combined. Drop donuts in the glaze and quickly top them with sprinkles. Don’t wait or the glaze will dry and won’t hold the sprinkles any longer;
Chocolate glaze: place chocolate and oil in a microwave safe bowl and melt for about 1 minute (I suggest checking and mixing it every 20 seconds and once the minute has passed, if there is any need to melt it any further, keep on microwaving it and checking it every 10 seconds). Let cool for a couple of minutes then coat the top of your donuts in chocolate and decorate right away with sprinkles.
You’re all done! Let me just warn you: these will disappear the moment they will reach your table...
