No-Hassle Mini Quiches

Are you thinking of baking a healthy quiche but do not want to use butter or don't have the time to wait for your pastry dough to rest in the fridge for an hour? It's time to try my no-hassle oil crust savory tarts!



Ingredients:

CRUST

  • 80g water

  • 70g Canola oil

  • 1 tsp baking powder

  • 250g flour

  • salt to taste

FILLING

  • 3 eggs

  • 1/2 cup of sour cream (use the same amount of milk or greek yogurt for a healthier option)

  • 12 Tbsp of shredded mozzarella cheese

  • 4 slices of ham (shredded or one thick slice cut into small cubes) *


Method:

  1. Combine water, oil and salt into a bowl and stir the mix quickly with a wooden spoon;

  2. Add in flour and baking powder little by little while stirring until a dough starts forming;

  3. Transfer your dough onto a floured surface and keep working it with your hands until it doesn't stick to them. Your dough is ready! Spread it with the help of a rolling pin than use your flower-shaped* cookie cutter or just a round glass to cut out 12 disks;

  4. Place your disks into a greased muffin tin;

  5. In a bowl beat the eggs with sour cream quickly;

  6. Fill each crust with a spoon of cheese and some ham or your favorite veggies**, then top it up with the beaten eggs;

  7. Cook at 180 Celsius for around 30 minutes or until golden.

* For a Christmas look try using a star shaped cookie cutter!

** If you're looking for a healthier meat-free option: replace your ham with one shredded courgette or a cup of baby spinach. You can add your veggies directly into your quiche cups and pop them in the oven. But I do suggest pre-cooking any veggie in a pan with a dash of olive oil until they release no more water. This will ensure your crust strays crunchy.
