Muffin Scones

What if I told you you can make scones without having to roll out or cut any dough? You just drop them in a muffin pan and there they are! Ready to eat.



Ingredients

  • 2 eggs

  • 1/2 cup milk

  • 1/3 cup Canola oil

  • 1 Tbs sugar

  • 2 cups flour

  • 4 tsp baking powder

Method

1. In bowl, whisk eggs, milk and sugar, then add in oil and mix;

2. Sieve flour and baking powder then add in and mix until just combined;

3. Pour mixture into a 12-muffin pan;

4. Bake at 180C for 25 minutes or until the tops are brown as per picture. I personally broil them for a couple of minutes at the end. That is that: aren’t these the easiest scones you’ve ever baked?
