Mom’s Apple cake

When it comes to apple pies, nothing beats my mom’s recipe. While being very easy and quick to make, it tastes surprisingly yummy and looks so much more appealing than a traditional apple cake. if you’ve got 10 minutes and 4 apples, that’s the recipe you were looking for!

Ingredients

  • 4/5 apples (about 700 g)

  • 110 g butter

  • 110 g sugar

  • 3 eggs

  • 1 Tbs Cointreau (optional, may be replaced by Vanilla extract)

  • 2 Tbs milk

  • 200 g flour

  • 14 g baking powder

  • 1 tsp lemon juice and a little sugar to dust the apples so they don’t tarnish


Method

  1. Preheat oven to 180C and butter and flour a spring mold;

  2. Peel and quarter apples. With a sharp knife make parallel cuts on the outer part of the wedges without cutting them all the way down. Sprinkle with a little lemon juice and sugar and put aside;

  3. In the bowl of standing mixer work butter and sugar until creamy, then add in eggs, milk and Cointreau and mix on medium speed for a couple of minutes;

  4. Fold in flour and baking powder and mix again until all ingredients are combined and there is no more flour on the sides of your bowl;

  5. Pour batter into spring mold and bake at 180C for about 45 minutes. You know your cake is ready when the top is golden brown, but if you’re not sure use a toothpick to test for doneness. Your apple pie is ready! Serve as it is or sprinkle with a little powdered sugar.
