Madeleine to share

One of my favorite French cakes has always been "Petite Madeleine". This tiny little shell-shaped sponge cake is a mouthful of joy. The classic Madeleine is no bigger than a cookie and it is just perfect with coffee or tea. But if you're curious to try something different this giant version of the original is really worth having. The French call it "La Madeleine du partage" (lit. The Madeleine to share"). Despite being as big as a standard cake, it is just as soft and melting as the traditional little one. On top of that, it's much quicker and easier to make as you don't need to fill in 24 mini molds: once your batter is ready you just pour it into your cake pan. And let me tell you: the wow effect is assured when you serve it on the table at the end of your meal. The only problem? My family never gets to share it with anyone as it is gone as soon as it's out of the oven!



Ingredients

  • 100 g eggs (2 small eggs, room temperature)

  • 100 g sugar

  • 40 g milk (cold)

  • 125 g flour

  • 125 g butter (melted)

  • 5 g baking powder

  • 1 tsp vanilla extract


Method

  1. Beat eggs and sugar for a couple of minutes then add in cold milk and whisk until combined;

  2. Fold in flour and baking powder followed by the melted butter. Your batter is ready! Let it rest in the fridge for about 30 minutes;

  3. Grease and flour you Madeleine mold thoroughly and pour the batter into it;

  4. Bake at 160 C for 40 minutes. Done!
