Keto air fried coconut shrimps


If you think healthy eating is boring, this Mexican appetizer is very likely to change your mind. Air fried coconut shrimps are so crunchy and yummy you will forget they are Keto and Paleo friendly. Serve them with kale salad and tostadas and dinner will be ready in as little as 10 minutes!

Ingredients

  • 500 g large shrimps, tail on

  • 1 egg

  • 70 g shredded coconut

  • 1 tsp garlic powder

  • 1/2 tsp paprika

  • 1 pinch of salt

  • 1 pinch of pepper

  • 1 lime, quartered (optional)

  • Cooking spray (optional)


Method

  1. Place egg in a bowl and lightly beat it;

  2. Place all dry ingredients (coconut, garlic powder, paprika, salt and pepper) in another bowl and mix them;

  3. Place shrimps into the first bowl and dip them one by one in the beaten egg. Then transfer them to the second bowl and coat them with the coconut/spice blend. Make sure they are completely coated;

  4. Spray your air fryer basket with cooking spray and place shrimps inside in one layer. Cook at 400 F for 8/10 minutes turning them over half way through cooking for a more even baking. Your coconut shrimps are ready! You may serve them with lime or cocktail sauce and layer them with some lettuce and kale on a crunchy tostada.
