Home-made chicken nuggets

When it comes to making your children happy at lunch time, there is little that can beat home-made oven baked nuggets. They taste like the originals but with so much less fat. Serve them with air fried French fries and fresh veggies and there you have it: happy meal is served.


Ingredients

Nuggets

  • 500 g of chicken breast, cubed

  • 1 pinch salt

  • 1/2 tsp garlic powder

  • 2 slices of sandwich bread, crust removed

  • 120 g milk

  • 120 g cream cheese

Breading

  • 1 egg

  • 50 ml water

  • 100 g breadcrumbs


Method


  1. Place chicken, salt and garlic powder in the bowl of a food and process at medium speed until minced (about 10 seconds). Then add in bread, milk and cream cheese and mix at high speed until combined (about 10 seconds);

  2. Prepare egg wash by beating egg and water; Wet your hands and use your palms to make about 28 little balls. Dip each ball into egg wash then roll it into breadcrumbs and place it onto an oven-proof tray lined with baking paper;

  3. Spray with cooking spray and bake at 200 C Static/190 C Fan for 15 minutes, then broil or air-fry at 200 C for an additional 3 minutes.*


*I like air-frying them for a couple of minutes because it makes them particularly crunchy on the outside. You could also air-fry them from scratch but then you’d need to work with 2 or 3 different batches in order to ensure even cooking.
