Ingredients
For the cake:
290 g Greek plain sugar free yogurt
150 g sugar (or 130 g Monk fruit)
260 g flour
30 g cocoa powder
4 + 1/4 tsp baking powder
5 eggs (lightly beaten)
1 tsp vanilla extract
1 pinch salt
For the frosting and filling:
180 g cream cheese
80 g confectioner sugar (or 50 g Monk fruit)
290 g Greek yogurt
3 Tbs sugar free jam
For decorating:
100 g fresh raspberries (or your favorite fruit)
Instructions
Preheat oven to 180°C/fan 160°C. Grease two 13 cm round cake tins and line their bases with baking paper;
Pour the yoghurt into a mixing bowl along with the sugar/monk fruit, eggs, vanilla extract, flour, cocoa powder, baking powder and salt and mix until you have a smooth cake batter (about 3 minutes). Weigh the mixture, divide it into two equal parts and pour each half into one of the prepared molds. Then gently tap the tins on the work surface to level off the top and get rid of any air bubble;
Bake for 30–35 minutes or until the tops are golden and a skewer inserted comes out clean. Take the cakes out of the oven and leave in the molds to cool for 10/15 minutes, then turn out onto a cooling rack and leave to cool completely;
Meanwhile, make the Greek yogurt frosting. Whip cream cheese and sugar or monk fruit until it’s blended and you can see no lumps. Then transfer to the bowl of an electric mixer, add in Greek yogurt and beat on medium speed until soft peaks form. Reserve in the fridge until you’re ready to use it;
Once your cakes are cool (at least one hour after you remove them from the oven), sandwich them together with the jam and half of the frosting. Then, fill a piping bag with the remaining frosting and create a decoration on top of your cake. Top it with fresh raspberries or your favorite fruit and... make sure you don’t eat it all up right away!
