Healthy&quick Mediterranean Tabbouhle salad



Ingredients:

  • 125g pre-cooked durum wheat semolina*

  • 150ml hot boiling water

  • 400g cherry tomatoes

  • 2 Tbs black olives

  • 150g Feta cheese, chopped

  • 1 cucumber, chopped

  • 1 small red onion, chopped

  • 1 Tbs olive oil

  • 1 lemon

  • 1 branch fresh mint (chopped)

  • 60/70g chopped parsley (one big bunch)

  • 1 tsp Herbes de Provence

  • 1 tsp garlic powder

  • salt and pepper to taste


Method:

  1. Combine pre-cooked durum wheat semolina with 150ml of boiling water in a bowl and let sit - covered - for at least 15 minutes;

  2. Combine all spices with olive oil and lemon juice in a separate bowl;

  3. Chop tomatoes, Feta cheese, cucumber, onion, parsley and mint;

  4. Drain and rinse black olives;

  5. When your semolina is ready, add in all the above mentioned ingredients and mix thoroughly. You are all done!


This salad tastes better when cold, so you may want to prepare it ahead of time and let it sit in the fridge for a couple of hours or overnight!


* It can be replaced by quinoa. If doing so please make sure you prepare it as instructed on the box, as the method and cooking time will differ.
