Healthy Mango&Shrimp tostadas



Ingredients:

SALAD

  • 1kg shrimps

  • 2 mangos, diced

  • 1 red onion, chopped


DRESSING

  • 1 lemon, juice

  • 1 Tbs extra virgin olive oil

  • 4 Tbs parsley or cilantro, chopped

  • Salt and pepper to taste

TOSTADAS

  • 10/12 corn tortillas

  • 1 Tbs Canola oil (or your favorite oil)


Method:

  1. Place shrimps, diced mangos and onion in a bowl;

  2. In another bowl, combine lemon juice, olive oil, salt and pepper, then add parsley;

  3. Pour the above dressing on your shrimp and mango mix. Your topping is ready!

  4. Place corn tortillas on an oven-proof tray then spray them with cooking spray or brush them with olive oil;

  5. Broil them in the oven for 2/3 minutes;*

  6. That's it! Everything is ready. I suggest topping your tostadas with the shrimp and mango "picadillo" right before serving them to prevent them from becoming soggy.


* If your oven isn't equipped with the Broil function, you may bake them at around 200C for 3/5 minutes basing on the size and thickness of your tortillas.
