Ham&Cheese cheat Focaccia

This focaccia bread reminds me so much of the one my mom used to make when I was little. She used to buy the bread at the bakery, fill it in and pop it in the oven. That's easy isn't it? Well, it is if you live in Italy. But I don't and making your own focaccia bread is great but time consuming. That's why I was so happy to find this recipe by Chiarapassion (one of my favorite food-bloggers). There are actually two versions of it, one including yeast and one with baking powder. As a busy mom I like the second one, which you can find here below. No kneading or resting time is required and it comes out of the oven ready to eat: the filling is already inside!

Ingredients

Dough

· 300g all-purpose flour

· 80g Canola oil

· 14g baking powder

· 2 eggs

· 200g milk, at room temperature

· 8 g salt

· 1 tsp sugar

· Some Rock sea salt and Rosemary leaves to decorate (optional)

Filling

· 150 g of ham (you could replace this by Salame or Mortadella)

· 200 g mozzarella cheese slices (Swiss and Monterrey cheese work great too)

Method

1. In a bowl combine eggs, oil and milk and mix quickly with a hand whisk;

2. Add flour, baking powder, sugar and salt and stir until combined;

3. Spray a 24 cm round mold with cooking spray then pour half the dough in it and level it with the help of a spatula;

4. Layer ham and mozzarella cheese on it, then top it with the rest of the dough and level it again;

5. Bake at 180C for about 40 minutes then broil for an additional 5 minutes.

Your focaccia savory cake is all done and it’s got a melting heart of mozzarella cheese inside. No kneading, cutting, filling or extra baking is to be done! How great is that?
