Giant donut cake

As all moms know, children are extremely attracted by anything colorful. So it’s no wonder that they all love something as fun-looking as a donut. Unfortunately, those little rings of dough are usually fried and full of sugar, so they tend to be any healthy parent’s worst nightmare. That is exactly why I came up with the idea of making my cheat baked donut. It is really just a Bundt cake, topped with a sugar glaze and sprinkles. But, needless to say, it is always a success among children! Last but not least, the recipe is one of the simplest in my blog. All you have to do is dropping all ingredients in a kitchen robot and mix until combined. In as little as half an hour your giant donut is ready. And if, like me, you are not a big fun of sugar glazes, you can actually top it with a little powdered sugar or melted chocolate. There are endless possibilities when it comes to decorating this cake and your kids will be happy to help you trying them all!


Ingredients

Cake

  • 3 eggs, room temperature

  • 1 pinch salt

  • 100 g sugar

  • 1 tsp Vanilla extract

  • 140 g freshly pressed orange juice (about 2 oranges)

  • 120 g Canola oil

  • 1 orange, zest

  • 200 g plain flour

  • 80 g almond flour

  • 16 g baking powder

Glaze

  • 100 g confectioner sugar

  • 2 Tbs cold water

  • 1/2 tsp almond extract (optional)

  • Colorful sugar sprinkles

Method

  1. Heat oven to 170 C and coat your Bundt cake mold thoroughly with butter and flour;

  2. Sift flours, sugar and baking powder in a bowl and discard any lump;

  3. Pour all ingredients (eggs, salt, sugar, vanilla extract, orange juice, oil, plain and almond flour, baking powder and lemon zest) in the bowl of a standing mixer and mix at medium speed until combined. That will require two minutes. Do not over mix;

  4. Pour batter into mold and bake at 170 C for 40 minutes. Your Bundt cake is ready. It tastes great as it is or with a dash of confectioner sugar. But if you want it to look just like in the picture, you may proceed with the following step;

  5. When your cake is room temperature, sift sugar in a bowl then add up water one spoon at a time until you get a smooth and creamy glaze (don’t add all the water at once as you might not need it all). Pour glaze on Bundt cake with the help of a pastry bag, then top it with sprinkles. You may as well use chocolate chips, crashed nuts, pomegranate or you can add up a couple of drops of food coloring to the glaze and have a whole new cake each time!
