Ingredients
1 1/2c all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 stick unsalted butter (room temperature)
1/2 c brown sugar
1/4 c granulated sugar
1 large egg
1 tsp vanilla extract
2/3 c chocolate chips
Method
Preheat oven to 175C;
In a bowl sift flour, baking soda and salt;
In a different bowl, cream butter and sugars until smooth (around 2 minutes);
Add in egg and vanilla on low speed until mixed in, then fold in the flour mixture with the help of a spatula or wooden spoon. Make sure you do not over mix;
Add 2/3 of the chocolate chips and stir with a wooden spoon just until incorporated (save the rest for later);
Chill dough about 10/15 minutes;
Meanwhile, grease and butter a pizza tray and pour batter onto it. Use your hands or a spatula to give it the shape of a giant cookie;*
Bake at 175 C for 20/25 minutes. Remove pan from the oven, sprinkle your cookie with the remaining chocolate chips and let it sit on its baking tray for a couple more minutes, then transfer to a wire rack until cool.
