Egg-free Tiramisù

When it comes to Italian desserts, nothing can beat a good Tiramisù. Yet not many people are keen on eating raw eggs nowadays and making a custard and a merengue is no easy job. So if you're looking for a good and a little healthier egg-free alternative, try this recipe!

Far from being the original, it is still a yummy and much faster version of an all-time favorite. And who doesn't love a quick and easy dessert? Plus, you don't even need to turn your oven on! Are you making it yet?



Ingredients:

· 42 Lady-finger cookies

· 400ml espresso coffee (you can add a spoon of Kahlua or Baileys if you wish so)

· 100g confectioner sugar

· 500g Mascarpone cheese (room temperature)

· 200ml whipping cream

· 50/80g unsweetened cocoa powder

Method:

1. First of all prepare your coffee and pour it in a large bowl so it can cool off;

2. Beat mascarpone cheese with a fork until soft and creamy;

3. In a separate bowl, whip your cream with confectioner sugar until soft peaks form, then fold in mascarpone cheese until combined;

4. Once your espresso is cold, soak the lady fingers in coffee and line them up to form a layer inside your tray;

5. Cover your cookies generously with 1/3 of the custard and sprinkle around 1 tsp of cocoa powder over it;

6. Repeat these steps until your cookies are over (I usually make 3 layers and use up to 40/42 ladyfingers);

7. Let sit in the fridge for at least 4 hours before serving it (let it rest overnight if you have time!).
