Ingredients
2 eggs
100g confectioner sugar
200/250g coconut flakes
Method
In a bowl whisk eggs and sugar until nicely mixed and foamy;
Add in coconut flakes little by little and gently fold them in with the help of a spatula;
Let rest in the fridge for 10 minutes;
Use your hands, two spoons or an ice-cream scoop to form little balls and drop them on a greased oven-proof tray;
Bake at 170C until the bottom of your cookies turns brown (around 15 minutes), then broil for one minute if you'd like the top to be brown too.
