Easy Chicken fajitas



Ingredients:

  • 800g chicken breast

  • 1 red onion

  • 1 Tbs Olive oil

  • 1/2 lime (yellow lemon will work too)

  • 2 tsp parsley (or cilantro if you like it)

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1 tsp garlic powder

  • 2 tsp paprika

  • 2 tsp cumin

  • 1 tsp chili powder (optional)

  • 6/8 Tortillas


Method:



  1. Preheat oven to 200C;

  2. First of all prepare your Taco mix by mixing up all spices in a bowl;

  3. Wrap Tortillas in aluminum foil and set aside;

  4. Slice chicken into strips;

  5. Slice onion thinly;

  6. Place onion, chicken in an roasting pan or oven-proof tray, then add up spices on top and spray with olive oil;

  7. Use your hands to toss all ingredients together then spread them in an even layer;

  8. Bake at 200C for around 20 minutes then broil for 2/3 minutes*;

  9. When your chicken is almost done, move it to the middle part of your oven, then place Tortillas on the rack right below (see picture).


Once ready, sprinkle chicken with parsley, add in some lemon wedges to decorate and serve with warm Tortillas and guacamole (see recipe https://www.aleontheroad.com/post/guacamole).


* Make sure you turn your pan half-way through and move the chicken with the help of a fork so the strips do not stick together.
