Crustless quiche cups


Ingredients:

  • 6 eggs

  • 3/4 cup of sour cream (use the same amount of milk or greek yogurt for a healthier option)

  • 12 Tbsp of shredded mozzarella cheese

  • 6 spoons of Parmesan cheese

  • 3 slices of ham (cut into halves)

  • salt

  • pepper

  • a branch of chopper parsley

Method:

  1. Place your ham slices into a greased muffin tin (see picture for details);

  2. In a bowl beat the eggs with sour cream quickly;

  3. Add salt and pepper to taste

  4. Fill each "ham crust" with a spoon of cheese, then add in the egg mix;

  5. Top with parsley and Parmesan;

  6. Cook at 180 Celsius for around 30 minutes or until golden.
