Ingredients:
400g or 15oz of lady finger cookies
5 eggs
400g espresso coffee (you can add a spoon of Kaluha or Baileys)
100g or 10 tbsp of sugar
500g or 2 1/3 cups of Mascarpone cheese
4 Tbs unsweetened cocoa powder
Method:
We’ll begin by preparing the custard: Separate 5 eggs and put the yolks in a large glass bowl. Now, add the sugar. Beat it all together well until the sugar is completely dissolved into the yolks. Add the mascarpone cheese and mix until combined
In a separate bowl, whip the egg whites until soft peaks form
Now fold the whipped egg whites gently into the mascarpone mix just until the custard comes together
Once your espresso is cold, soak the lady fingers in coffee and line them up to form a layer inside your tray. Then cover it generously with 1/3 of the custard and sprinkle some cocoa powder over it
Repeat these steps until your cookies are over (I usually make 3 layers and use up to 40/42 ladyfingers)
Let sit in the fridge for at least 4 hours before serving it (let it rest overnight if you have time!).
