Chicken, ham and cheese rolls

Are you looking for a keto meal that can make the whole family happy? These Italian chicken saltimbocca are ready in minutes and they’re one of my children’s favorite dinners!

Ingredients

  • 8 slices of chicken breast (about 800 g)

  • 8 slices ham (about 150 g)

  • 8 slices Provolone cheese (about 80 g)

  • 1 Tbs olive oil

  • 2 Tbs dry white wine (or water)

  • 1 branch of rosemary

  • 1 clove of garlic

  • salt and pepper to taste

  • 16 toothpicks

Method

  1. Start by flattening the chicken breasts with a tenderizer so they are no thicker than 4 mm;

  2. Arrange one slice of ham on a cutting board, top it with a chicken breast and place Provolone cheese in its center. Roll up tightly and seal with the help of 2 toothpicks. Proceed likewise with all the remaining ingredients until there is none left;

  3. Arrange the rolls in a lightly greased ovenproof pan and sprinkle them with a dash of salt and pepper. Add in 2 garlic cloves, a branch of rosemary, 1 tablespoon of olive oil and 2 tablespoons of dry white wine (or water);

  4. Bake at 180 C for about 15/18 minutes, then broil for 2/3 more minutes until the ham looks brown and crunchy.
