Cheese puffs

If you love cheese and you’re looking for an easy appetizer that you can get ready in half an hour, here is the answer. These easy and quick French cheese puffs have become one of our family favs ever since we ate them at a party years ago in Congo. All you need to make them is a saucepan and a wooden spoon. And you can serve them like this or cut them and fill them in with with grilled veggies, tuna mousse, raw ham or smoked salmon and cream cheese. However you prepare them they will be over before you even serve them!

Ingredients

  • 100 g water

  • 50 g butter (or margarine)

  • 1 tsp salt

  • 85 g flour

  • 2 medium eggs

  • 50g Parmesan or Emmenthal cheese (optional)


Method

  1. Boil water, butter and salt in a saucepan, then decrease the heat and add in flour and Parmesan cheese all at once;

  2. Keep mixing on low heat with the help of a wooden spoon until your dough turns into a ball that doesn’t stick to sides of your pan, then set aside and let cool for a couple of minutes;

  3. When it’s no longer hot, add in eggs one at a time and keep mixing until they are completely incorporated. Your dough should be sticky and not too liquid;

  4. Set oven to 220 C and line an ovenproof dish with baking paper. Spoon dough directly onto it with the help of a pastry bag or by simply using two spoons. Bake at 220 C for 8 minutes then turn the temperature down to 180 and bake for around 10/12 minutes or until the tops are golden.
