I love baking for my kids. But more than that I want to make sure they can enjoy a little snack without eating huge amounts of fat and sugar. If you, like me, are looking for a little guilt-free snack, here you are the recipe you need!
Ingredients (for around 24 cookies)
250g all-purpose flour
125g old fashioned oats
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
100g agave syrup
40ml whipping cream
1 small egg yolk
1 tsp vanilla extract
90g chocolate chips (or cranberries)
Method
Preheat oven to 210C;
Sift four and baking soda then transfer them to a bowl;
Add in oatmeal, cinnamon, salt, agave syrup and chocolate chips (or cranberries) and mix until a sticky dough forms;
Add whipping cream, then mix again until just combined (don’t over-mix!)
Your dough is ready! You may pour it into a pastry bag if you're planning on using one*;
Preheat the oven to 210C;
Use pastry bag or ice-cream scooper to drop around a teaspoon of dough directly onto the baking tray. Make sure to leave some space between one cookie and another;
Bake for 20 minutes or until the bottoms are brown;
Remove the cookies from the oven and let them cool on a rack. That's it! You're all done!
*You may skip this step if you want to use an ice-cream scooper or two spoons to drop your cookies onto the baking tray.
