
Ingredients
1 round brie cheese
1 Tbs apricot or raspberry jam
1 Tbs pecans, roughly chopped
1 egg
1 Tbs milk
1 sheet of store bought puff pastry or my homemade quiche crust (https://www.aleontheroad.com/post/ale-s-buttery-quiche )
Method
Preheat oven to 350°F and line a baking sheet with parchment paper;
Place puff pastry directly onto the baking sheet and set Brie cheese in the center. Using a knife, score top rind of cheese in an X pattern, spacing cuts apart. Then top it with jam and sprinkle pecans all over it;
Fold dough up and over sides of cheese, pleating it neatly on top to enclose it. Whip egg and milk just until combined then brush cheese wheel with egg wash;
Bake at 180 C fan for around 20/25 minutes or until golden. Let sit for at least 5 minutes before slicing it or the hot melting cheese will fall all over the place (been there, done that... 🙈😂). Enjoy while still warm!
