Apple “Tarte fine”

When you are in a rush and want to get a stunning dessert ready in minutes, this caramelized apple tart is a real savior. If you have a roll of puff pastry in your fridge, peeling and slicing your apples is all you have to do! But if you want to go the extra mile and make your own rough puff pastry, try the recipe here below. You can find an amazing how-to video on Natalia’s Cattelani‘s Youtube channel. I love it because it only takes 15 minutes to make, it has one third of the total amount of butter a traditional puff pastry contains and tastes just as wonderful. The best part about this recipes? Saving the scrapes to make Palmiers cookies!

Ingredients

Easy and quick puff pastry

  • 100 g cold unsalted butter, diced (margarine works too)

  • 100 g cold flour

  • 50 g cold water

  • 1/4 tsp salt

Topping

  • 30 g salted butter (or margarine)

  • 30 grams caster sugar (or coconut sugar)

  • 2 medium-size apples, about 400 g


Method

  1. Place butter and flour in the freezer for 5 minutes;

  2. In the bowl of a standing mixer, pulse butter and flour until the mixture looks crumbly, then add in cold water and mix until the dough comes together and forms a ball;

  3. Roll out dough onto a floured surface, then roll it up lengthwise like a burrito, pat it down with your rolling pin and roll it up again to give it the shape of a snail. Cover in plastic wrap and store in the fridge for at least 1 hour before using;

  4. Core, peel and thinly slice apples cross-wise. Melt butter, spread half of it onto a disk of baking paper and sprinkle half the sugar onto the buttered area;

  5. Roll out your dough again onto a floured surface and cut a 24 cm circle - store the scrapes in the fridge to make cookies later. Place your pastry circle right on top of the buttered and sugared baking paper;

  6. Lay apples slices in an overlapping pattern on top of the pastry leaving around a 1cm margin. Then brush with the remaining butter;

  7. Bake in the lower side of the oven at 180 C for 30 minutes, then sprinkle with sugar and broil for a couple of minutes, just until apples are caramelized. Serve warm topped with a scoop of vanilla ice-cream if desired.

You can really make anything with it but my kids favorite is this: Palmiers cookies!
