Ingredients:
CRUST
210g flour
100g warm water
50ml Canola oil
1 tsp baking powder
1/2 tsp salt
FILLING
6 slices of ham
6 slices mozzarella cheese
4 eggs
1/2 cup of sour cream (use the same amount of milk or greek yogurt for a healthier option)
6 Tbs shredded Parmesan cheese
Salt, pepper and Herbes de Provence to taste
Method:
Combine water, oil and salt into a bowl and stir the mix quickly with a wooden spoon;
Add in flour and baking powder little by little while stirring until a dough starts forming;
Transfer your dough onto a floured surface and keep working it with your hands until it doesn't stick to them;
Your dough is ready! Spread it with the help of a rolling pin then transfer it to a greased oven-proof mold;
Let your dough sit in the fridge while you prepare your filling;
In a bowl beat the eggs with sour cream quickly;
Spread a layer of ham on your unbaked crust, sprinkle with herbes de Provence, then top it with a layer of mozzarella cheese or your favorite veggies (see note)*;
Finally add in the beaten eggs and sprinkle Parmesan cheese all over it;
Cook at 180 Celsius for around 45/50 minutes or until the top is golden.
* If you're looking for a healthier meat-free option: replace your ham with one shredded courgette or a cup of baby spinach. I suggest pre-cooking your veggies in a pan for a couple of minutes until they release no more water. This will ensure your crust strays crunchy.
