Ale's quick savory tart

Ingredients:

CRUST

  • 210g flour

  • 100g warm water

  • 50ml Canola oil

  • 1 tsp baking powder

  • 1/2 tsp salt

FILLING

  • 6 slices of ham

  • 6 slices mozzarella cheese

  • 4 eggs

  • 1/2 cup of sour cream (use the same amount of milk or greek yogurt for a healthier option)

  • 6 Tbs shredded Parmesan cheese

  • Salt, pepper and Herbes de Provence to taste

Method:

  1. Combine water, oil and salt into a bowl and stir the mix quickly with a wooden spoon;

  2. Add in flour and baking powder little by little while stirring until a dough starts forming;

  3. Transfer your dough onto a floured surface and keep working it with your hands until it doesn't stick to them;

  4. Your dough is ready! Spread it with the help of a rolling pin then transfer it to a greased oven-proof mold;

  5. Let your dough sit in the fridge while you prepare your filling;

  6. In a bowl beat the eggs with sour cream quickly;

  7. Spread a layer of ham on your unbaked crust, sprinkle with herbes de Provence, then top it with a layer of mozzarella cheese or your favorite veggies (see note)*;

  8. Finally add in the beaten eggs and sprinkle Parmesan cheese all over it;

  9. Cook at 180 Celsius for around 45/50 minutes or until the top is golden.

* If you're looking for a healthier meat-free option: replace your ham with one shredded courgette or a cup of baby spinach. I suggest pre-cooking your veggies in a pan for a couple of minutes until they release no more water. This will ensure your crust strays crunchy.
