This is my my favorite quiche recipe of all times. I make it as often as once a week for my family and it's always in the menu when we have guests over. Whether it be as a main course or starter, this savory tart is a great show-stopper that you can prepare in less than 20 minutes.
Ingredients:
CRUST
200g flour
100g cold butter
50ml cold water
1/2 tsp salt
FILLING
6 slices of ham
6 slices mozzarella cheese
4 eggs
1/2 cup of sour cream (use the same amount of milk or greek yogurt for a healthier option)
6 Tbs shredded Parmesan cheese
Salt, pepper and Herbes de Provence to taste
Method:
Place butter and flour in the bowl of a standing mixer and press pulse for a couple of times until the two ingredients are combined and look like bread crumbs;
Then turn your mixer on and add in water slowly until your dough turns into a ball;
Transfer dough onto a floured surface and press it down quickly to give it the shape of a small disk. Then wrap it up in cling film and let it rest in the fridge for at least 30 minutes;
Spread your dough with the help of a rolling pin then transfer it to a greased oven-proof quiche mold;
In a bowl beat the eggs with sour cream quickly and salt and pepper to taste;
Spread a layer of ham on your unbaked crust, sprinkle with herbes de Provence, then top it with a layer of mozzarella cheese or your favorite veggies (see note)
Finally add in the beaten eggs and sprinkle Parmesan cheese all over it;
Cook at 180 Celsius for around 45/50 minutes or until the top is golden.
* If you're looking for a healthier meat-free option: replace your ham with one shredded courgette or a cup of baby spinach. I suggest pre-cooking your veggies in a pan for a couple of minutes until they release no more water. This will ensure your crust strays crunchy.
